Dinners for the whole family on a weeknight are less difficult than many people think. For busy families, comforting, filling, and swiftly made meals don't have to mean sacrificing nutrition. Chili is a fantastic example of a food that most families appreciate. The family can be eating in less time than the pizza delivery with a timesaving dish that is ready to serve in half an hour.

Picadillo is a traditional Latin chili with smoky, spicy aromas and a hint of sweetness from natural raisins. A healthy alternative to the traditional recipe is to use ground chicken chopped into bits instead of ground beef. Serve it straight up in bowls or over rice for a more substantial one-dish meal.

Chili, coupled with a variety of toppings such as grated cheese, scallions, cilantro, diced avocado, and sour cream, offers a crowd-pleasing display for guests. The dinner is finished off with tortilla chips and a simple green salad.

Picadillo chili can be used to fill tortillas for lunch the next day. Reheat leftovers in a microwave and spoon into a warmed wheat tortilla. If you have any leftover shredded cheese, roll it up and serve.

2 tsp cumin powder

2 tablespoons chili powder

1 teaspoon of salt

a quarter teaspoon of cinnamon

1 pound chicken breasts, boneless and skinless, cut into 1-inch chunks

1 tablespoon of vegetable oil

1 big sliced onion

4 garlic cloves, minced

2 cans (14.5 oz. each) undrained Mexican-style chopped tomatoes

1/2 cup chipotle salsa or salsa with a medium heat

Sun-Maid Raisins, 3/4 cup

1 can (16 oz.) drained red or black beans

Chopped cilantro, shredded cheddar cheese, and sour cream are all optional garnishes.

Cumin, chili powder, salt, and cinnamon should all be combined. Using your hands, evenly coat the chicken in seasonings. In a large saucepan, heat the oil over medium heat. Cook for 5 minutes after adding the onion. Toss in the chicken and garlic. Cook for 3 minutes, stirring once in a while. Combine the tomatoes, salsa, and raisins in a mixing bowl. Bring to a low boil, then reduce to a low heat. Cook for 10 minutes with the lid on.

Add the beans and mix well. Cover and cook for another 5 minutes. To serve, ladle the soup into bowls and garnish with chosen toppings. This recipe serves 6 people.
